Lemon Coconut Pancakes (serves 1)
1/4 cup coconut flour
1/4 cup rolled oats
1/4 teaspoon baking powder
Stevia (or other sweetener), to taste
2 tablespoons canned pumpkin (or applesauce)
1/4 teaspoon vanilla extract
1/2 teaspoon pure lemon oil (or you could probably use lemon zest)
1 egg (or replace with one flax egg or other vegan egg replacer)
6 tablespoons (or more) water (or almond milk if you have it - I was out)
Coconut butter, for topping (optional - cream cheese would also be good)
Put the dry ingredients (flour, oats, stevia, and baking powder) in a bowl and give a good mix:

Some people love it, others hate it, and others are in between. I rank myself at in between. If it's a deep strong, lemon flavor then there's good chances that I will love it. But I would take something chocolaty over something lemony any day!
