Well once again, I missed WIAW, but once again, I'll show you my eats anyway and hope that someday I will actually remember to post my eats on Wednesday. *Sigh*
So the day (Tuesday, that is) was started with this:
As usual, breakfast was followed by a nice ride on my horsey. When lunch time rolled around, I came across Katie's Brownie Batter Pancakes. Now breakfast was long gone, but as you may remember from this post, I don't let such things stop me. Pancakes for lunch it was! (The four different pictures of the same thing show a quality of indecisiveness in me - yes, indecisiveness is definitely a quality. ;)
My talking pancakes were eaten with a veggie plate:
Now we come to dinner. When Ashley posted her recipe for Lemon Basil + Grilled Corn Pasta, I decided I was going to make it. And soon. So Tuesday evening, I did.
For the pasta, I used this:

And that was Tuesday's eats (there may have also been multiple handfuls of peanut butter filled pretzels throughout the day...). Oh and after the pasta, I had a widdle bowl of black grapes - black grapes are my favorite! :)
And now for the recipe! I'm really excited for this one because it's one of my faves!
Greek Quesadilla
Ingredients:
1 brown rice tortilla (or flour tortilla), cut in half
1 egg, lightly beaten
1 ounce of feta cheese
About 2 tablespoons of chopped onion
A handful of cherry tomatoes, chopped
7 (more or less as desired) peperoncini rings, chopped
A few olives, chopped - optional (I didn't use any because I didn't have any, but I think they would be good if you have them)
Directions:
Heat a small, non stick pan with a bit of coconut oil or butter. Pour in the egg and scramble it.
Heat a non stick flat-pan over low heat, and place the tortilla on it.
When the egg is done, remove it from the pan, and toss in the onion, tomato, peperoncini, and olives (if using). Saute them for a few minutes, until the onion begins to turn clear.
Flip over both halves of the tortilla and top one of the halves with the scrambled egg, feta cheese, and sautéed onion mixture. Then place the other half of the tortilla on top and press it down firmly with a spatula.
Cut into triangles, serve, and enjoy!
