A Day of Eats + a Recipe!

So I figured if I posted a recipe today along with my eats, then I would get a tiny award for not procrastinating completely today.  That sounds fair, right?

Well once again, I missed WIAW, but once again, I'll show you my eats anyway and hope that someday I will actually remember to post my eats on Wednesday. *Sigh*

So the day (Tuesday, that is) was started with this:

Twas a green monster made from a biiiig banana, a container of spinach, chia seeds, a packet of protein powder (brand: I Completely Forgot the Name... what?!  You've never heard of them?  Good, because I haven't either ;) , and almond milk.  On top was a shredded wheat cake, Puffins - Original, and Puffins - Multigrain.  I've been loving my green monsters lately!  They're just so good and refreshing on hot summer days. :D

As usual, breakfast was followed by a nice ride on my horsey.  When lunch time rolled around, I came across Katie's Brownie Batter Pancakes.  Now breakfast was long gone, but as you may remember from this post, I don't let such things stop me.  Pancakes for lunch it was!  (The four different pictures of the same thing show a quality of indecisiveness in me - yes, indecisiveness is definitely a quality. ;)

I layered mine with coconut butter and peanut butter because those two butters and chocolate are like best friends forever.  Now what are those pictures above saying?  Maybe something like, "Hey look at me!  I almost didn't become a pancake because my batter tastes better than brownie batter, and I was almost eaten raw." Or, "As I was getting munched I heard a faint 'I feel like I'm eating brownies for lunch'." But most likely they're saying, "I am Katie's Brownie Batter Pancakes, and I am the best pancake in the world."  You see, I knew pictures could speak louder than words.

Now we come to dinner.  When Ashley posted her recipe for Lemon Basil + Grilled Corn Pasta, I decided I was going to make it.  And soon.  So Tuesday evening, I did. 
For the pasta, I used this:

The grilling added so much flavor!  Although the tomatoes were a bit messy... some juice may or may not have squirted on my *cough* shorts *cough*.
The final dish:

Now I could tell you that my mom and I (we were the only ones home that night) oooed and awwed over this dish all through out dinner and during our after-dinner walk.  Or I could tell you that after a few bites we were already making plans to make it again.  I could mention that it took some serious will power for us to not demolish all four servings, and that the only thing that held me back was the thought of the next day's lunch.  Or I could just command all of you to your kitchens, have you make it, and let you experience the amazingess for yourself.  I think that in the end, you will thank me for the last one the most.

And that was Tuesday's eats (there may have also been multiple handfuls of peanut butter filled pretzels throughout the day...).  Oh and after the pasta, I had a widdle bowl of black grapes - black grapes are my favorite! :)

And now for the recipe!  I'm really excited for this one because it's one of my faves!


Greek Quesadilla

Ingredients:
1 brown rice tortilla (or flour tortilla), cut in half
1 egg, lightly beaten
1 ounce of feta cheese
About 2 tablespoons of chopped onion
A handful of cherry tomatoes, chopped
7 (more or less as desired) peperoncini rings, chopped
A few olives, chopped - optional (I didn't use any because I didn't have any, but I think they would be good if you have them)

Directions:
Heat a small, non stick pan with a bit of coconut oil or butter.  Pour in the egg and scramble it.  
Heat a non stick flat-pan over low heat, and place the tortilla on it.
When the egg is done, remove it from the pan, and toss in the onion, tomato, peperoncini, and olives (if using).  Saute them for a few minutes, until the onion begins to turn clear.
Flip over both halves of the tortilla and top one of the halves with the scrambled egg, feta cheese, and sautéed onion mixture.  Then place the other half of the tortilla on top and press it down firmly with a spatula.  
Cut into triangles, serve, and enjoy!

My favorite pancake has to be chocolate, so your numerous photos of the brownie batter pancakes were a sight for my hungry eyes. :) Your pasta looked amazing too! My favorite quesadilla would have a layer of black beans and cheese with some green onion. But I have to try yours now :)

I saw those pancakes on Katie's blog too and was dying to try them. Looks like you beat me to the punch.

Speaking of the pancakes, what else do you use coconut butter for? I just got some but have NO idea what to do with it!

That green smoothie with puffins looks delish!! Your photography of all your eats is making me really drool, especially the pic of your dinner yum! I've never been a fan of pancakes, but my favorite quesadillas are chicken with loads of veggies :)

Ahhhh PUFFINS! <3 I so miss them..they are AMAZING!
And those pancakes look so so good too! I love katie's recipes :)
In fact, all of your photography is absolutely gorgeous by the way! You are a talented girly! :)
And I'm still hanging on for that peanut butter spelt bagel recipe by the way! :P
My favorite pancake has to be pumpkin and maple..probably because I'm obsessed with pumpkin at the moment!

That coconut butter looks perfect, like a vanilla glaze of some sort!
My favorite pancakes are either blueberry or chocolate chip...can't go wrong with either of those!

Okay, so those pancakes look heavenly. Those should be one of those pictures they put on a menu to make people order it. I'm not a huge fan of pancakes unless they're the real thing -- like really fluffy, buttery, white flour pancakes.

Oh, you know there are going to have to be some brownie batter pancakes in my future! I'm a notorious pancake batter eater, I have to say- I never end up with much cooked haha. its horrible.

And so does the pasta! I can imagine grilling the stuff into it made it taste great.
