Before last night, I had really only had peanut butter in one of two forms: on top of oatmeal or straight from the jar! :) But as I was trying to decide what to make for dinner last night, something popped into my had - peanut butter seitan! Wait! Don't run away thinking that I'm crazy (at least not yet ;) Give this savory version of peanut butter a try first. If you still think I'm crazy after that, then I give you full permission to run away ;) But to be honest, I loved this. My parents both thought that it could use a bit of salt (that isn't too surprising as I hardly ever add salt to my dishes), but they thought the flavor was pretty good! Score!
Oh, one more thing: I made up the recipe as I went (based on a recipe in Vegan Brunch) and I didn't write down the ingredient list until the seitan was steaming. So, if, for some reason, it doesn't turn out, it could be that I forgot an ingredient. Or it could just be that I have extremely bizarre taste buds ;)
Peanut Butter Seitan (serves 4)
Ingredients:
2/3 cup canned ckickpeas, drained and rinsed
3/4 cup vital wheat gluten
1/4 cup chickpea flour
2 tablespoons nutritional yeast
1/2 teaspoon garlic powder
1/2 teaspoon chile powder
1 teaspoon onion powder
1 teaspoon curry powder
Sea salt (optional - I didn't use any)
6 tablespoons peanut butter (I used crunchy Maranatha)
About 1 cup water
Directions:
Mash the garbanzo beans in a bowl until they're as mashed as you can get:
Now add the vital what gluten, chickpea flour, nutritional yeast, and the load of spices:
Go ahead and give it a good mix and then it's time to stir in the peanut butter and the water. You may need a little more or less water than the amount listed depending on how dry you mixture is. In the end, it should look something like this:
Next, divide the mixture into two mini loafs and wrap each loaf tightly in aluminum foil. Steam the loafs for about 40 minutes or until they fill firm (I steamed mine for 30 minutes and they weren't done so I think 40 minutes would be about right).

I sliced half a loaf and arranged it over some brown rice like so (along with cucumber, carrots, tomatoes, and a juicy orange):
I think this would especially wonderful with some kind of mushroom sauce!
So, if you like, experimenting, give savory peanut butter a chance! I'm sure (at least hope) you won't be disappointed!

As I much as I liked the seitan, my favorite way is (and always will be) by the spoonful :)
