Last Breakfast Pancakes

Had the morning I ate these pancakes been my last breakfast, I would have died a very happy person.  Obviously my last breakfast isn't for many years to come, but when it does arrive some day, these pancakes will likely be on the menu.  But on to brighter topics - like the recipe.

Blueberry Lemon Cornmeal Pancakes
I like to use meyer lemons for these - their flavor shows more of the sweet lemon side and less of the acidity side that is most often associated with lemons.  But if you can't find them, I'm sure a regular lemon would do.
Serves 1

Ingredients:
  • 2 tablespoons cornmeal
  • 3 tablespoons brown rice flour
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon lemon zest (the zest of one small-ish lemon)
  • 1/4 cup blueberries, fresh or frozen, but preferably fresh
  • 1 tablespoon fresh lemon juice
  • 3 tablespoons almond milk
  • 1/2 teaspoon vanilla extract
  • 1 heaping tablespoon Greek yogurt (I'm sure applesauce would make a fine substitution)
  • 4 drop stevia or other sweetener of choice
Directions:
  1. In a small mixing bowl, combine the cornmeal, flour, baking powder, zest, and blueberries.
  2. Add the lemon juice, almond milk, vanilla extract, yogurt, and sweetener.  Mix well, but don't over mix.
  3. Heat a non-stick skillet over medium low heat.  Cook pancakes for about 3 minutes on each side, or until golden brown.
  4. Serve with Greek yogurt, maple syrup, or, if you're feeling extra special, a drizzle of lemon icing (powdered sugar mixed with lemon juice).  Enjoy!

Spring breaks is here!  Yaaaay!  This means spending extra time with my horse and making new earring designs for my fundraising-based earring business (among other things)!  

Enjoy the week everyone - even if you're not on spring break.  You can still try something new, go someplace different... just make the most of this week and every day after!  Don't get too caught up in school or work that you forget what a wonderful gift life is and that you're meant to enjoy it and live it to its fullest, as well as help others enjoy it - it's something that everyone deserves.  Now if you'll excuse me, I'm off to follow my own advice.  See you all next time!

Lemon Coconut Pancakes

It's time for pancakes to return (dear pancakes, oh how I have missed you over the past six days).  Although, the pancakes that I made this morning were very much unlike a normal pancake.  But who wants a normal pancake anyway?  I think the difference was mostly in the texture.  It was more crumbly which I've decided to blame on the coconut flour (poor coconut flour ;).  I realize that not everyone has access to coconut flour, so I'm sure you could substitute whole wheat pastry flour.  The down side: lemon coconut pancakes would turn into lemon pancakes.  Then up side: more normal pancakes (well, I suppose this could be another down side).  The point is, make substitutions according to what you have available.  You don't want to miss out! :)


Lemon Coconut Pancakes (serves 1)

Ingredients:
1/4 cup coconut flour
1/4 cup rolled oats
1/4 teaspoon baking powder
Stevia (or other sweetener), to taste
2 tablespoons canned pumpkin (or applesauce)
1/4 teaspoon vanilla extract
1/2 teaspoon pure lemon oil (or you could probably use lemon zest)
1 egg (or replace with one flax egg or other vegan egg replacer)
6 tablespoons (or more) water (or almond milk if you have it - I was out)
Coconut butter, for topping (optional - cream cheese would also be good)

Directions:
Put the dry ingredients (flour, oats, stevia, and baking powder) in a bowl and give a good mix:

Add the remaining ingredients and give another good stir (you may need slightly more or less water than the amount listed) :

Give your arm a pat as it has done some good work for you :)  Then, poor about 1/4 cup increments of batter onto a heated, non-stick skillet.  You may need to spread it out if the batter is thick.  Cook for about 3 minutes, flip pancakes, and continue to cook for another 2 or 3 minutes.  Top with coconut butter or other topping of choice.

You can tell from the picture that they look more like corn cakes.  Not exactly what I was going for.  The taste, on the other hand, was pretty spot on!  I actually put the blueberries on in an attempt to make the pancakes look prettier, but next time, I think I will put even more blueberries on!  Lemon + blueberries = amazingness (don't I have great math skills ;)


The daily question: Are you a fan of lemon?
Some people love it, others hate it, and others are in between.  I rank myself at in between. If it's a deep strong, lemon flavor then there's good chances that I will love it.  But I would take something chocolaty over something lemony any day!
